Making desserts ahead of time for a gathering or party is a wonderful fashion to avert stress, the last thing you need earlier an issue. So allow'southward talk almost freezing cakes ahead of time.

The best and easiest fashion to make a cake alee of time is to freeze the unassembled/undecorated layers. Over the by few years, I've tested multiple different means to freeze cakes including changing factors like the cooling process, the wrapping, the container, the length of time, thawing, decorating, etc. Terminal twelvemonth I establish the best method when I was prepping and practicing cakes for my girl'southward birthday. How to Freeze Cakes

Step one: Bake and completely cool a cake/cake layers. These stride-past-step photos show round cakes, only you lot can freeze square, rectangle, Bundt cakes, etc. See my x best Cake Baking Tips for all-time practices on baking and cooling cakes.

Step 2: Once the block(s) cools completely, wrap it in Press & Seal. From one baker to another– this is the best product for wrapping cakes. Maybe it's but me, only thin plastic/saran wrap is incredibly clingy and frustrating. And I always experience like I need to double wrap food when using information technology. It definitely works, but Press & Seal is and then much easier to employ and I've honestly institute that it keeps my food fresher. (Not working with this brand, only really love it.)

Step 3: Write the type of cake and use-by date on a large piece of aluminum foil. For best taste and texture, don't freeze cakes for longer than 3 months. You could stretch it to four or 5 months, but the sooner you lot serve it, the fresher it tastes. I write on the aluminum foil before wrapping the cake just in case the ink seeps through. (It has earlier!)

Step 4: Wrap the block in the aluminum foil.

Pace half dozen: Freeze for upwards to 3 months.

The cakes are wrapped in two layers: Press & Seal, then aluminum foil. The kickoff layer keeps the cake tight and fresh and the aluminum foil ensures no condensation will seep in. This is also how I wrap assistant breadstuff and other quick breads, as well. Double layer = maximum freshness and no freezer burn. Wet is the enemy, so don't be agape to add some other layer of Press & Seal or aluminum foil.

How to Thaw Cakes

Thawing cakes is easy. Transfer the wrapped cakes from the freezer to the refrigerator i day before decorating/serving. I usually accept them out of the freezer container to thaw. The cakes take at least 8 hours to thaw completely in the fridge. Sometimes I forget and just allow the cake(south) thaw at room temperature, but it's better they thaw at a slower rate in the refrigerator.

This is important: Make sure yous're thawing the cakes while they're however in the wrapping. Y'all encounter, condensation forms as foods thaw. This way the condensation will form on the wrapping, not the cake. Wet glutinous block, anyone?

Best Cakes to Freeze

You can freeze just about any block afterward they've cooled completely. Mega flavorful cakes such as banana block, chocolate block, carrot block, and pumpkin cake freeze and thaw beautifully when wrapped in a couple layers, as detailed higher up. I notice their flavor is fifty-fifty better after the freezing/thawing procedure! Bundt cakes and pound cake freeze wonderfully also, just brand certain they're completely cooled and wrapped tightly before freezing. For cheesecake instructions, see "How to Freeze Cheesecake" in my cheesecake recipe.

Bakery's Tip: For accented best taste and texture, avoid freezing fragile cakes like angel food cake, vertical block, and pavlova. Though yous definitely COULD freeze these (and the recipes instruct how), they gustatory modality best when freshly fabricated.

All of our cake recipes include make-ahead and/or freezing instructions.

#1 Success Tip

Don't Freeze Busy Cake: For the accented best gustatory modality and texture, assemble and decorate the cake every bit close to serving as possible. That's why I recommend only freezing the cake/block layers. A completely busy cake will contract and expand during the freezing/thawing process, ruining some of your hard work. You can make the frosting ahead of time and refrigerate it for 1 day, only fresh frosting actually does taste all-time. Freezing leftover frosted cake is completely fine, though. (Because it's just leftover and doesn't need to impress anyone anymore!)
